Method
- Chop coriander leaves
- Chop tomato into small cubes
- Peel garlic and chop them into reasonably thin slices
- Pour 3 teaspoon oil in a shallow frying pan in low-medium heat.
- Add mustard and cumin seeds and wait till they splutter
- Add garlic and fry slightly till they turn golden
- Add tomato and fry till the skin peels off
- Add coriander leaves and fry till it shrinks
- Wait till the mixture gets to room temperature and put in a mixer. Add tamarind water and salt. Grind to a coarse paste by adding water as required.
- Splutter mustard and cumin seeds in oil and pour on top of the paste.
